Mom, Where did you get this smoothie?

During the holiday season, I received a gift card to a “smoothie establishment.”  While out doing errands with Little Pumpkin Doodle, I’d forgotten my diaper bag along with her snack. It was close to lunch and she started getting cranky.  Since I had a few more errands to run, I sensed it was time to use the smoothie gift card.

I knew the “smoothie establishment” didn’t use organic fruit and used a lot of  sugar. In fact, the smoothie I ordered had over 25 grams of sugar, and that was the light version.  So to remedy the situation, I split the serving in half and added water.  Needless to say, LPD loved it!  When LPD slurped the last bits of smoothie out of her cup I tossed it in my purse, one, so I could reuse the cup, and two, well you’ll figure out it out in a second. As expected, before going to bed that evening LPD said “Mommy another smoothie tomorrow, please!” I told her I would think about it.  “Good thing I saved that cup!”

I happen to like to make my own smoothies and thought I would make LPD a smoothie the following day for her afternoon snack.  That evening while browsing Pinterest (love this site!)  for new recipes, I came across several recipes for Spinach smoothies.  I admit, Spinach didn’t sound appetizing in a smoothie, but it did sound like a good way for me to get more veggies in LPD.  I happen to like spinach,  it’s a grocery list staple in our home.  Hubby (who does all the grocery shopping )  buys our organic spinach at our local Trader Joes because its affordable ($1.99 a package) and he loves a bargain.

The following day I made my version of the Spinach smoothie, poured it into the ” saved smoothie cup” and headed out to pick up LPD.  After buckling LPD into her car seat, she said “Mommy we go get smoothie?” and I said, “mommy already picked one up for you (o.k. so it was a white lie)”.   I handed LPD  the cup, she took one sip and said “mom, where did you get this smoothie-taste funny?”  Alright, I couldn’t lie to my precious little one, I told her mommy made it at home.  She smiled and sipped her smoothie despite not being from the smoothie place.

The smoothie may look funny, but I promise  its delicious!

Despite my best effort, I realized you can’t fool a two-year old. Try it for yourself and let me know what you think.

Ingredients

  • 1/2 cup strawberries, blueberries, raspberries etc.}
  • 1/2 cup organic packed baby spinach
  • 1/2 small frozen banana (I like to use the frozen banana instead of ice)
  • 1  cup organic 2% MILK
  • 1/2 teaspoon vanilla extract (optional)
  • 1/4 cup 2% plain greek yogurt (optional)

Directions

  1. Place milk in the blender, then the remaining ingredients and blend until smooth.
  2.  I usually measure out 4 ounces, and put the remaining amount in the freezer.  When I want more I defrost the contents in the refrigerator the night before.
