Mommy’s Organics Authentic Spanish Gazpacho

Mommys Organics Summer SoupMany years ago I had the opportunity to spend time in the Canary Islands on the island of Las Palmas. I learned how to make Gazpacho (it’s a chilled soup). I’ve renamed it Mommy’s Organics Authentic Spanish Gazpacho.  While visiting I   was fortunate to learn to cook some authentic Spanish cuisine, and it’s also where I had my first Mojito.

Mommy’s Organics Authentic Spanish Gazpacho

When it’s hot outside in Spain Gazpacho is often served as part of the long lunch, which is always followed by siesta.

I make gazpacho every summer, and  since Monday is 4th of July, I thought I would share it with you for you to enjoy. I think it’s a nice complement to some of the heavier foods you may be enjoying.

6 ripe red organic tomatoes peeled and chopped

1/4 cup white vinegar

1/3 cup seasoned bread crumbs

2/3 cup water

1 medium cucumber peeled, seeded, chopped

1 medium red bell pepper, seeded, chopped

1/2 tablespoon of salt. You may add more depending on your taste buds.

1 tablespoon olive oil

4 to 5 garlic cloves chopped

1/4 tablespoon cumin

Add all the ingredients in a blender.

Optional:  add 1 cup of ice to the soup and store in an air tight container over night. It will ensure the soup isn’t salty from the seasoned bread crumbs.

When you’re ready to serve, stir the soup to release the flavors and enjoy! Optional: add a slice of fresh avocado for garnish.
